Lightly butter a large baking sheet. Mix flour, ginger and bicarbonate of soda together, then add the butter and rub into the flour mixture with your fingers until it looks like breadcrumbs. Add the sugar. Break the egg into a bowl and lightly beat, then mix in the golden syrup and stir this mixture into the flour. Lightly sprinkle some flour on a clean worktop and put the dough mixture on it. Stretch out the dough then fold it in half and repeat this a few times until the mixture is smooth. Roll out the dough with a rolling pin until it is around half a centimetre thick or just over if you like your cookies a little thicker. Cut out shapes with some cookie cutters and lift them onto the baking sheet. Put the cookies in the oven for between 12 and 15 minutes until they are golden brown. Take the baking sheet out of the oven and Leave the biscuits on it for about five minutes before lifting them onto a wire rack to cook down. Decorate your cookies with whatever you want! We used white chocolate stars and gold sprinkles. Et voila! Sophie Mirman - Founder and Creative Director Share on Facebook Tweet on Twitter Pin on Pinterest Email
